Brooklyn Kura sake tasting and history course at 180 the Store Tribeca
We are delighted to host “Understanding Sake: History, Methods, and Exploring Regionality”, an evening of tasting and conversation led by Alex Floyd of Brooklyn Kura. Based in Sunset Park, Brooklyn Kura is the first sake brewery in New York, and draws inspiration from more than 1,000 years of Japanese brewing history.
Following the Brooklyn Kura pour, you will have the opportunity to taste four sakes from distinct regions of Japan. The evening will trace how ingredients and place, along with the decisions of the brewer, define the flavor and character. While wine is often spoken about through the land and the grape, sake carries the influence of people, water and accumulated brewing knowledge, particularly that of “influential brewers who craft a style in a region.”
One of the regions explored will be Niigata, an area known for heavy snowfall, cold temperatures and soft water. Its brewers developed ways of fermenting in colder conditions, helping to advance sake-making more broadly. The tasting will include sake by Hakkaisan, Brooklyn Kura’s partner brewery, founded in 1922 in Niigata. Alex describes its sake as “the epitome” of the style from the region, being “very pure and clean,” adding that it is often called “magic water.”
